I baked my first Christmas cake last year and it was a hearty success so I decided to try another Christmas cake recipe this year. Last years recipe was from Rachel Allen. This year I ventured over the Irish Sea and decided to use Delia’s ‘Classic Christmas Cake Recipe‘. According to Delia it will be “rich, dark and quite moist” so I am pretty excited about it. I really liked the cake last year although it was quite light in comparison to the Christmas cakes I am used to. Step 1 today was to soak the dried fruit (raisins, sultanas, currants and glacé cherries) and candied peel in brandy. My mother always uses Irish Whiskey as liqueur of choice for rich fruit cakes so the brandy effect should be interesting. I will bake the actual cake tomorrow so watch this space…
